Nakajima Jozo Junmai Kaboshu 8,5% 500ml

While Yuzu is floral and aromatic (like a cross between a lemon and a mandarin), Kabosu is a distinct Japanese citrus primarily grown in Oita Prefecture. It tastes more like a cross between a lime and a lemon, with a slightly more savory, vinegar-like acidity.

This is a very distinctive fruit liqueur made from a base of Kozaemon Junmai Sake mixed with Kabosu (Native Japanese lime) extract from fruit harvested in Kyushu and Oita Prefecture.

Nakashima is a local sake brewery with a history of over 300 years since 1702. In 2001, the brand "Kozaemon" was introduced, which is very popular at home and abroad. The use of underground water flowing from Mount Byobu brings out the full flavour of the rice. The product range extends from pure rice sake to liqueurs.

Serving Suggestion

Because of its higher acidity and lime-like profile, this specific bottle is the absolute best of the Shiroku series for:

  • Highballs: Mix 1 part Kabosushu with 2 parts sparkling water and a sprig of mint.

  • Spicy Food Pairing: It cuts through the heat of Thai or spicy Szechuan dishes much better than the sweeter Yuzushu.

  • Seafood: Use it as a "liquid garnish" for raw oysters or white fish sashimi.

Note on ABV: You might occasionally see a version of this at 5% ABV in certain export markets, but the premium Junmai-based version you’re looking for is the 8.5% variety.
