Asahi Shuzo 'Dassai 39' Sake

Junmai Daiginjo Yamaguchi is made from 100% rice of the Yamada Nishiki variety.

Enjoy the flowery and expertly-balanced Dassai 39 Junmai Daiginjo's pleasant and addictive notes of ripe pineapples, mangoes, apples and pears. The rice comes from Yamaguchi province.

Japan purest spring water is used for this sake.

The outer layer of the rice grain is removed until the rice grain is only half the size. Then the rice is washed, soaked and gently steamed.

The koji mold is added to part of it, which converts the starch in the rice into glucose. Freshly steamed rice and yeast are then added to the first mash in several steps. Then the alcoholic fermentation kicks in while the fungal enzymes continue to produce sugar.

The production process takes one to two months and takes place in peace. The sake only ripens in winter. The cool temperatures are essential for a slow fermentation. This guarantees maximum aromatic intensity and complexity.

The fermented sake is stored for 6 to 12 months and filtered before bottling to avoid cloudiness.
