The Dassai 45 is the successor of the Dassai 50 and has an even higher polishing ratio.

In this sake, the grain of rice is polished to 45% of its original weight.

This has made this sake even softer and more refined, a sake with a subtle taste. In the scent you can smell many types of fruit, such as green apple, melon, mandarin and also notes of blossom and flowers. In the taste, the sake has a balanced taste, with a mild sweetness and wonderful fruit aromas. A sake that goes well with all kinds of dishes, for example with white meat or poultry. Dassai's sakes are Kosher.

The Asahi Shuzo brewery has been around for over 200 years and is located in Yamaguchi.

Not an area known for its top breweries, but Asahi Shuzo is a big exception. Asahi Shuzo's breakthrough was around 1990, when they presented the series 'Dassai' sake. Made from the king of rice 'Yamada-nishiki'.

Reviews

"Nancy Hachisu is...intrepid. Outrageously creative. Intensely passionate. Committed. True and real. I urge you to cook from this book with abandon, but first read it like a memoir, chapter by chapter, and you will share in the story of a modern-day family, a totally unique and extraordinary one."
